Country Ham Fried Rice

Look! A recipe: Country Ham Fried Rice

yup, it's in grams again. It's the best way, I still promise.

400g diced country ham

650g of cooked rice dried overnight in the fridge

30g sesame oil

1 large onion diced

150g frozen peas thawed

2 large carrots, sliced

2 eggs beaten

6  green onions, sliced

4g soy sauce

½ teaspoon chili flakes

Render country ham in a wok or pan, remove and set aside. Add sesame oil, carrots and onions and cook until slightly caramelized.  Add rice and fry on high heat. Turn heat medium,  add soy sauce and chili flakes, stir to incorporate.  Add eggs and stir until mixed and cooked. Finish in pan with peas and green onion and add the ham back to the rice.
